    This Iceberg Lettuce Salad is so simple, yet so flavorful. Made with crisp lettuce, chopped veggies, and a tangy homemade dressing, it makes a great side dish or starter for any meal.

    This Iceberg Lettuce Salad is a very easy recipe that offers up tons of flavor. Made with crisp iceberg lettuce leaves, juicy tomatoes, sliced cucumbers, crunchy radish, and sweet bell pepper, every bite is scrumptious. Fresh herbs and hemp seeds add both flavor and health benefits to make this dish something you can feel good about eating. And homemade dressing adds lots of tanginess to balance out all the other flavors.


    This salad is really versatile, so you can easily add and substitute ingredients to make it the salad that’s perfect for you and your family. You can also pre-cut the vegetables and make the dressing beforehand to save time when you’re ready to serve. This makes a great side dish, as well as lunch if you are looking for something light, but satisfying. Let’s look at the ingredients you’ll be using to make this Iceberg Lettuce Salad.

    What you'll need

    • Iceberg Lettuce.
    • Tomatoes.
    • Cucumbers.
    • Bell Peppers.
    • Radishes.
    • Fresh Dill. Or parsley.
    • Hemp Seeds. Optional.
    • Dressing: apple cider vinegar, olive oil, salt, and pepper.

    How to make it

    1. Place all the veggies, dill, and hemp seeds into a large mixing bowl.

    2. Add the olive oil, apple cider vinegar, salt, and pepper, and mix everything well. Serve immediately.

    Tips for the best Iceberg Lettuce Salad

    • Shred the lettuce. This salad tastes best when the iceberg lettuce is shredded into fine ribbons. Lay it on its flat side and slice it, breaking the chunks apart with your hands afterward.
    • Dry the lettuce. To keep excess moisture out of the salad, which can make it soggy, thoroughly dry the iceberg lettuce before combining it with the other ingredients. Using a salad spinner or towel works best for this. 
    • Use fresh dill. Fresh herbs have the best flavor, so if possible, choose these over dried. You’ll love the crisp, herbaceous flavor that fresh dill adds.
    • Don’t dress the salad until you serve it. To avoid the salad getting soggy and the lettuce wilting, don’t dress it until you’re ready to serve. But you can make the dressing ahead of time.

    Add-ins and Substitutes

    • Add other vegetables. You can add any veggies you like to this salad, such as carrots, broccoli, beets, onion, and more. Just cut them to a similar size as the other veggies in the salad.
    • Substitute another dressing. Feel free to try other delicious vegan dressings in this great salad. It’s so versatile, you could serve it with a balsamic, ranch, Italian, or Russian dressing.
    • Add protein. You can make this Iceberg Lettuce Salad more filling by adding protein. Try black beans, cubed tofu, or green lentils.
    • Add fruits and nuts. This recipe would be delicious with some apples, pears, and cranberries. You could also add chopped almonds, walnuts, or cashews.

    How to Store

    Store this salad in an airtight container or covered with plastic wrap in the refrigerator. It will last for 1-5 days. If the salad is dressed, it will get soggy after a day, but if you store the dressing separately, the salad will stay fresh longer. You can also store the vegetables separate from each other to avoid the moisture in one making another soggy.
