What you'll need
- Avocado. Look for ones that are ripe, but not too soft.
- Cucumber. English or regular are fine. You can peel them or leave the peel if you prefer.
- Tomato. Cherry or grape are good, but you can also dice Roma tomatoes if it's what you have.
- Onion. I like white onions for their milder flavor here, but red or yellow also work.
- Cilantro. Fresh.
- Lime Juice. Also fresh. The concentrate does not have the same flavor.
- Olive Oil. Or any other oil that you prefer.
- Salt & Pepper. To taste.
How to make it
1. Dice the avocado and slice the cucumber, tomato, and onion. Chop the cilantro and then place everything in a large bowl. Add the lime juice, olive oil, salt, and pepper and toss until everything is mixed together well. Serve.

Hi Sharlene! I am not a big fan of onions myself. But my husband says that I deprive people of this delicious (to most) and healthy vegetable. I he suggested to add it to my fresh salad recipes. 🙂
