    Simple Avocado Salad

    This Simple Avocado Salad is refreshing and full of amazing flavors. Creamy avocado, juicy tomatoes, and crisp cucumbers are tossed in lime dressing, making this simple recipe perfect for hot summer days.

    This Simple Avocado Salad is one of my favorite dishes to serve during the summer. With hot weather, these cool refreshing flavors and juicy vegetables are such a scrumptious relief. Made with lots of in-season veggies and tossed in a lime and cilantro dressing, there is so much to like about this Avocado Salad. You'll love the way the crunchy cucumbers combine with the creamy avocado.

    This recipe is nice and easy with simple ingredients that you can whip up quickly for barbecues, dinners, and get-togethers. This healthy food is great to add as one of your summer staples. The flavors work nicely with so many dishes, so you can be sure it will work with whatever else is getting served. This cucumber tomato salad is also a nice change from more traditional green salads, providing some fresh flavors and colors at your table. Let's look at the ingredients that are used to make this simple salad.

    What you'll need

    • Haas avocados. Look for ones that are ripe, but not too soft.
    • Cucumber. English or regular are fine. You can peel them or leave the peel if you prefer.
    • Tomato. Juicy cherry tomatoes are good, but you can also dice Roma tomatoes if it's what you have.
    • Onion. I like white onions for their milder flavor here, but red onion or yellow onion also work.
    • Cilantro. Fresh cilantro is the way to go.
    • Lime Juice. Fresh lime juice please. The concentrate does not have the same flavor.
    • Extra virgin olive oil. Or any other oil that you prefer.
    • Sea salt & Black pepper. To taste.

    How to make it

    1. Dice the avocado and slice the cucumber, tomato, and onion. Chop the cilantro and then place everything in a large bowl. Add the lime juice, olive oil, salt, and pepper and toss until everything is mixed together well. Serve.

    Tips for the best Avocado Salad

    • Use firm, ripe avocados. Because the diced avocado will be tossed with other vegetables, you want it to be ripe, but not too soft. Otherwise it will get mushy in the salad.
    • Try to cut everything to the same size. Keeping the ingredients to similar sizes as you dice and slice will make the salad look better, but also ensure that all the flavors make it on to each forkful.
    • Choose fresh ingredients. This Simple Avocado Salad shines when you use fresh ingredients with the best flavor. Fresh herbs, lime, and even well-chosen veggies really matter in the final product.

    Add-ins and substitutes

    • Add other vegetables. This versatile salad can be made with other vegetables, such as corn, carrots, green onion, bell pepper, radish, grape tomatoes, and others. Just dice them to a similar size to the other ingredients.
    • Substitute different herbs. If you are not a fan of cilantro, then try other fresh herbs to flavor your Avocado Salad. Parsley, basil, mint, or dill would all work.
    • Try different dressing flavors. This simple lime dressing is so bright and delicious, but you could also try it with some red wine vinegar, apple cider vinegar, lemon juice, or maple syrup, to add some tangy or sweet notes.

    This cucumber tomato avocado salad can be placed in an airtight container or a large salad bowl topped with plastic wrap in the refrigerator for best results. It should last for up to 2 days. You may want to drizzle some extra lime juice on top to protect the avocado from browning.

        Hi Sharlene! I am not a big fan of onions myself. But my husband says that I deprive people of this delicious (to most) and healthy vegetable. I he suggested to add it to my fresh salad recipes. 🙂
