These Baked Portobello Steaks are so simple and pack in a lot of flavor. These mushrooms are a great vegan alternative to meat because they offer a satisfying and meaty texture that can be used in lots of dishes. What you'll need
- Portobello mushrooms.
- BBQ seasoning. Use your favorite kind. I like this BBQ seasoning.
- Salt & Pepper. Use freshly ground pepper, if possible.
- Fresh rosemary. Adds a nice aroma.
- Olive Oil. Or another oil of your choice.
How to make it
1. Gently wash the portobellos and pat them dry with paper towels. Remove the stems and some of the white flesh around the rim.
2. Place the mushrooms gill side up on a baking tray and season with BBQ seasoning, salt, and pepper.
3. Add rosemary leaves on top and drizzle them with olive oil (about ½ tbsp. per mushroom).
4. Bake at 350°F for 30 minutes. Remove the baked rosemary leaves before serving.
Tips for the best Baked Portobello Steaks
- Choose the best mushrooms. To buy the best portobellos, choose ones with a firm cap that is uniform in color and slightly tacky to the touch. They should not be slimy.
- Pat the Portobellos dry. Drying any excess water from the mushrooms will allow the seasoning and oil to adhere better to them. This will also keep the mushrooms from steaming in the oven.
- Use fresh rosemary. You just can't get as much flavor from dried herbs as you do from fresh. If possible, use fresh springs of rosemary to impart the best flavor and aroma into this dish.
- Don't skimp on the oil. Make sure each mushroom gets about half a tablespoon so they stay moist throughout the cooking. This is what gives these mushrooms their delicious "meaty" texture.
Add-ins and Substitutes
- Add other vegetables. You can bake these seasoned portobello steaks with other veggies as well. On the same pan, add cubed sweet potato, asparagus, or broccoli. Adjust cook time as needed.
- Substitute other seasonings. You can also make this Baked Portobello Steaks recipe with other spices, such as garlic powder, cayenne pepper, or paprika. Use your preferred BBQ seasoning.

How to Store
These Baked Portobello Steaks can be stored in an airtight container in the refrigerator. They will last for about 2 days, but are best when eaten fresh. To reheat them, just place them in the oven to heat until warmed through, or in a pan on the stovetop to heat. If you like, you can even give the mushrooms a light char this way.
