Roasted Sweet Potatoes on a spatula

This recipe for Easy Roasted Sweet Potatoes is all you need for a delicious way to serve up this flavorful and filling vegetable. Since sweet potatoes are root vegetables that are really hard when raw, roasting them is the perfect way to give them a tender texture while extracting the maximum flavor. Slightly sweet to start with, cooking gives them just a bit of caramelization that is so yummy.

One of the best things about this dish is how well it pairs with others. Whether it's other vegetables, proteins, or grains, seasoned sweet potatoes round out a meal nicely. This is also a winner for kids because the sweet potato's natural sweetness makes them forget that this is actually a very healthy vegetable. With 400% of your daily Vitamin A, beta carotene, and a boost for your immune system, this veggie is as healthful as it is delicious. Let's look at what you'll be using to make these Easy Roasted Sweet Potatoes.

    What you'll need

    • Sweet Potatoes.
    • Oil. I like using grapeseed or avocado oil the most because these have a neutral flavor.
    • Spices. Paprika, cumin, garlic powder, salt, and pepper.

How to make these Roasted Sweet Potatoes

    1. Peel the sweet potatoes and cut them into cubes.

Tips for the best Roasted Sweet Potatoes

    • Choose good quality sweet potatoes. Look for a sweet potato that is firm and has no cracks or bruises on the skin. Avoid those with wrinkles or color changes as these indicate dryness and spoilage.
    • Cut the cubes to one size. Cut the cubes to a uniform size so each one will cook thoroughly and at the same speed as the others. A mix of too large or small chunks can lead to over or undercooking.
    • Spread the seasoning evenly. Using your clean hands is best for thoroughly spreading the oil and seasonings over each of the cubes. Tossing in a bowl or using tongs can also work.
    • Separate the cubes for even cooking. Try to avoid the sweet potato cubes touching each other so that heat can reach all the surfaces for even cooking and tenderness.

    Add-ins and Substitutes

    • Add something sweet. Sweet potatoes pair well with sweet sauces, so you can add pure maple syrup, honey, brown sugar, or even balsamic vinegar for a sweet or tangy flavor boost.
    • Substitute other vegetables. Make this dish with white potatoes, yams, purple potatoes, beets, or carrots. This recipe works really well with root vegetables.
    • Use other seasonings. You can also make these Roasted Sweet Potatoes with cayenne pepper, cinnamon, rosemary, thyme, or chili pepper.
    • Cut them any way you like. Cubes are not the only way to make this recipe. You can also cut them into circles, half moons, sticks, or whatever shape works for how you will serve them.

    How to Store

Store any leftover Roasted Sweet Potatoes in an airtight container in the refrigerator once they have cooled. They will stay fresh for up to 5 days. To reheat them, place them back on a sheet pan in the oven or in a toaster oven for a few minutes to give them a light crispiness to the outside. Or you can microwave them for a couple of minutes until warmed through.

    What to Serve with it

    • With pasta. Serve this vegetables dish alongside your favorite pasta. Try it with Creamy Lemon Spaghetti, Tomato Mushroom Spinach Pasta, Pasta with Roasted Pepper Sauce, or Mushroom Bolognese Pasta.
    • Over grains. Top some Spinach Rice or Mushroom Couscous with these sweet potatoes.
    • With tofu. Serve these Roasted Sweet Potatoes with Quick Maple Sriracha Tofu or with this Veggie Tofu Breakfast Scramble in the morning.
    • Alongside other vegetables. Plate them with a fresh salad, like this Iceberg Lettuce Salad or Kale Apple Salad. Or with these Cauliflower Steaks with Chermoula Sauce, Vegan Stuffed Eggplants, or a Whole Roasted Cabbage for the main course.
