These Crispy Fried Potatoes are simple, golden, and just so good. It’s amazing how a few sliced potatoes and a pan can turn into something this comforting and impossible to stop eating.

Golden crispy fried potato slices with onion and fresh dill on a plate

This is exactly how fried potatoes are made in Ukraine, and it’s one of those meals everyone grows up loving. No fries, no cubes — just simple slices that turn golden and crispy in the pan. And somehow, they always taste even better when you eat them straight from the skillet, telling yourself “just one more,” about five times in a row. And of course, we never eat them alone. There’s always something fermented on the side — a tomato, a cucumber, or some cabbage. And honestly, that combination is pure happiness. The warm, crispy potatoes with a juicy fermented tomato… it’s the kind of food that makes you close your eyes for a second after the first bite. Now that I’m writing this, I realize I might have to share my fermented vegetables recipe with you soon… because you truly haven’t lived until you’ve tried them together.

❤️ Why You’ll Love These Crispy Fried Potatoes

🥔 They turn perfectly golden and crispy
The edges get crispy, the inside stays soft, and somehow they always disappear faster than you expect.

😊 Made from the simplest ingredients
Just potatoes, onion, and a pan — and it turns into something everyone loves.

🤍 That cozy, home kitchen feeling
The smell, the sound, the golden slices… it’s one of those meals that just feels right.

🥒 Even better with something fermented on the side
Add a fermented cucumber, tomato, or cabbage, and suddenly it becomes the best meal ever.

    🧺 Ingredients You’ll Need

Peeled potatoes, onion, dill, olive oil, salt, and pepper on a table

    🥔 Potatoes – 2 lbs (900 g), peeled and sliced into thin half-moons

    🫒 Olive oil – 3 tbsp (45 ml)

    🧅 Onion – 1 medium (150 g), thinly sliced

    🧂 Salt – ¾ tsp (4 g), or to taste

    ⚫ Black pepper – ¼ tsp (0.5 g), or to taste

    🌿 Fresh dill – 3 tbsp (10 g), finely chopped

📋 How to Make Crispy Fried Potatoes

    1. Slice the potatoes. Cut the peeled potatoes in half lengthwise, then slice them into thin half-moons.

    2. Start cooking the potatoes. Heat the olive oil in a large skillet over medium heat. Add the sliced potatoes and spread them in an even layer. Cook without a lid, stirring occasionally, until they’re tender inside and turning golden on the edges.

    3. Add the onion. Stir in the sliced onion and cook for a few more minutes, until it softens and blends beautifully with the potatoes.

👩‍🍳 Cooking Tips for the Best Crispy Fried Potatoes

    🔪 Slice the potatoes thinly
Thinner slices cook faster and give you those beautiful golden, crispy edges.

    🍳 Don’t overcrowd the pan
Give the potatoes some space so they fry properly and don’t turn soft.

⏳ Let them cook without stirring too often
This helps them develop that perfect golden crust everyone loves.

🌿 Add the dill at the very end
This keeps the flavor fresh and makes the potatoes smell absolutely amazing.

✨ Potatoes are simple, humble, and incredibly comforting. When cooked until golden and crispy, they turn into something truly special. It’s amazing how one everyday ingredient can bring so much warmth to the table. If you’re curious why potatoes have been loved for generations, there’s a lovely little read that explains it beautifully.

    🔀 Recipe Variations

    🧄 Add some garlic
If you love garlic like I do, a little bit added at the end makes these potatoes even more irresistible.

🌶️ Add a tiny bit of heat
Just a pinch of red pepper flakes gives them a gentle warmth without overpowering that cozy flavor.

    🧅 Use more onion
The onion turns soft and slightly sweet, and honestly, sometimes I add extra because it’s just so good.

🌿 Try them with fresh parsley
If you don’t have dill, parsley works beautifully and gives them that same fresh, home-cooked feeling.

    🫙 Storage & Make-Ahead

    🧊 Storage

If you have any leftovers (which honestly doesn’t happen often), store them in an airtight container in the fridge for up to 3 days. Just warm them in a skillet, and they’ll be delicious again.

    ⏳ Make-ahead tip

You can slice the potatoes ahead of time and keep them in cold water in the fridge. When you’re ready, just drain, dry, and cook — fresh, golden potatoes in no time.

🍽️ What to Serve With Crispy Fried Potatoes

As I mentioned earlier, the absolute best way to eat these potatoes is with a fermented tomato or cucumber on the side. I know, I know… I don’t have that recipe here yet, which honestly feels like a crime 😊 But I promise I’ll fix that soon. Everyone deserves to experience that combination at least once.

🍅 Marinated Tomatoes – juicy, tangy, and so refreshing next to warm potatoes

🥒 Creamy Cucumber Radish Salad – cool, creamy, and the perfect contrast

🥬 Cabbage Salad with Avocado Dressing – fresh, crunchy, and full of flavor

💡 My Tip: Don’t rush them. Let the potatoes sit in the pan and slowly turn golden — that’s when the magic happens. And if you find yourself eating a few straight from the skillet before serving… just know I always do the same.

    ❓ Frequently Asked Questions

Can I use potatoes with the skin on?

Yes, you can. I personally peel them because that’s how I’ve always made them, and they turn out extra soft inside. But if you like the skin, it works too.

    Why aren’t my potatoes crispy?

Most likely they were overcrowded or stirred too often. Give them space and a little time, and they’ll turn beautifully golden.

Can I use dried dill instead of fresh?

You can, but fresh dill really makes a difference here. It adds that special flavor and smell that makes the potatoes feel complete.

    📝 Final Thoughts

This is one of those recipes that proves you don’t need anything fancy to make something truly good. Just potatoes, a pan, and a little time — and suddenly your kitchen smells amazing, and everything feels cozy. It’s simple, honest food that people have been making for generations, and for good reason. And if you end up eating half of them straight from the skillet… I hope it makes you smile as much as it always makes me smile.

If you make these crispy fried potatoes, I’d love to hear how they turn out for you. And be honest… did they all make it to the plate, or did a few disappear straight from the skillet? That always seems to happen in my kitchen 😊 Tell me what you served them with, and if you tried them with something fermented on the side. Your little kitchen moments and stories always make this space feel so real and special. 💛

    🐾 Life of Emma

My husband gave me this teddy bear… but Emma decided it’s hers now.
They’ve been quietly arguing over it ever since, but honestly, I already know who’s going to win. Call me weak, but yes — I’m a grown woman who lets a 10-pound dog take over everything. One look at those eyes, and I never stood a chance. 🧸🐾
