    • Cucumbers. You can choose to peel them or leave the skin on, it's up to you.

    • Scallions. Also called green onions. These have a milder taste than other onions.
    • Vegan Mayo. Use homemade or the store-bought kind.
    • Salt & Pepper. To taste. I used pink salt in this recipe.

    How to Make this Salad

    1. Cut the cucumbers into thin circles, and the radishes into thin half-circles. Chop the scallions and place all of the veggies into a large mixing bowl.

    2. Pour the mayo on top and season with salt and pepper. Mix everything well and serve right away.

    Pro Tips

    • Pre-cut the vegetables. To save time when you are ready to put the salad together, slice the cucumbers and radish beforehand. They will need to be used that day, but can be kept in the fridge until then.
    • Scallions are best in this recipe. While there are some other onions that are mild like scallions, such as leeks and chives, don't replace these with white, yellow, or red onions. Their flavors are too strong for this salad and would overpower it.
    • Try your hand at making mayo. If you don't have any vegan mayo, making it is actually quite easy. With a few simple ingredients and an immersion blender, you can make your own for this recipe and others.
    • Use English cucumbers if you want to avoid seeds. Some people don't like cucumber seeds, so English (or hothouse) cucumbers are a better choice. They are thinner and longer, but they have smaller seeds that are less noticeable.
