This Creamy Cucumber Radish Salad is light and crisp and very refreshing. While it's delicious on its own, this salad is also great when served with other richer dishes.

Ingredients

  • 4 small cucumbers (about 14 oz.)
  • 8 radishes
  • 1 small bunch scallions
  • ¼ cup vegan mayo
  • ¼ tsp. salt
  • ¼ tsp. pepper

Instructions

  • Cut the cucumbers into thin circles, and the radishes into thin half-circles. Chop the scallions and place all of the veggies into a large mixing bowl.
  • Pour the mayo on top and season with salt and pepper. Mix everything well and serve right away.
