Ingredients

  • 4 ears corn
  • 3 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp lime juice freshly squeezed, for after baking
  • 2 tbsp cilantro finely chopped (optional, for serving)

Instructions

  • Stand each ear of corn vertically and carefully slice it lengthwise into quarters. You’ll get 4 ribs per cob. Be extra careful — a sharp knife and a steady hand are key here.

  • Place the corn ribs in a large jar or bowl. Add olive oil, smoked paprika, garlic powder, salt, and black pepper.I like to use a jar with a lid and give it a good shake — it’s fast, fun, and coats everything evenly!

  • Preheat your oven to 400°F (200°C). Arrange the ribs cut side down on a parchment-lined baking sheet. Bake for 20–25 minutes, or until the edges are golden, crispy, and slightly curled.
  • Drizzle the warm ribs with fresh lime juice and sprinkle with chopped cilantro if using. Serve with the optional dipping sauce on the side.
