Cut the cabbage into thick steaks, about 1–1.5 inches thick.
1 medium cabbage
Place the cabbage steaks on a baking sheet. Brush both sides with olive oil and season with salt, pepper, oregano, smoked paprika, and garlic powder. Bake at 400°F (200°C) for 20–25 minutes, until tender and lightly browned.

Remove from the oven and spread marinara sauce evenly over each steak.

Top with vegan mozzarella, mushrooms, and sun-dried tomatoes. Return to the oven and bake for another 10–15 minutes, until the cheese is melted and slightly golden.

Garnish with fresh parsley and serve warm.
