Ingredients

  • 1 lb mushrooms
  • 3 tbsp olive oil
  • 2 tbsp soy sauce
  • 2 tbsp lemon juice
  • 1 tsp sugar
  • 1 tsp whole-grain mustard
  • ½ tsp salt, or to taste
  • 3 cloves garlic
  • 2 tbsp dill
  • 1 tbsp parsley
  • 1 small red onion
  • 1 medium Bell pepper

Instructions

  • Bring a pot of water to a boil, add the mushrooms, and cook for exactly 2 minutes. Immediately transfer them to an ice bath for another 2 minutes to stop the cooking process and keep them perfectly tender but firm.

  • In a small bowl or directly in your large mixing container, combine the olive oil, soy sauce, lemon juice, whole-grain mustard, sugar, and salt. Add the minced garlic and finely chopped fresh herbs, then whisk everything together until well combined and the sugar has dissolved.

  • Place the chilled, well-drained mushrooms into the dressing. Add the thinly sliced bell peppers and red onion.
