Peel your butternut squash thoroughly, then slice the neck into even rounds (about ½-inch thick). Trim or halve the pieces as needed so they are ready to form your crust shape.
1 medium butternut squash, 2 tbsp olive oil
Line a baking sheet with parchment paper. Arrange the squash pieces close together in a circle or a pretty flower pattern to form the base of your pizza. Drizzle with olive oil and bake at 400°F (200°C) for 20–25 minutes until fork-tender and lightly golden.
Remove the tray from the oven. Place a second sheet of parchment paper over the hot squash pieces. Using the flat bottom of a drinking glass or jar, firmly press down and smash the squash into a thin, continuous, flat crust layer. Gently peel off the top parchment paper.
Scatter the dairy-free parmesan generously all over the crust, then add the dairy-free mozzarella right in the center for that extra melty bite. Sprinkle the Italian seasoning evenly over the cheese, and arrange the sliced sun-dried tomatoes across the top. Return to the oven and bake for another 12–15 minutes, until the cheese is bubbly, melted, and the edges are beautifully crisp.

Finish the hot pizza with a glossy drizzle of balsamic glaze and fresh basil ribbons. Let it rest for 2–3 minutes to set, then slice with a pizza cutter and enjoy!
