Ingredients

  • 1 medium cauliflower heads
  • 3 tbsp. vegan mayo
  • ½ tbsp. sriracha
  • 2 garlic cloves, minced

Instructions

  • Cut off the bottom stem end from the cauliflower so that you create a flat base and can stand the cauliflower up on a cutting board. Resting the cauliflower on the stem, use a large, sharp knife to trim away the sides, then cut the remaining head into 2 or 3 1-inch “steaks,” depending on the size of your cauliflower. Reserve the sides for another use.
  • In a small bowl mix together the mayo, sriracha, and garlic.
  • Add about ¼ cup of water and salt into a large skillet. Bring to a gentle simmer, and add the cauliflower steaks. Cover with lid and let it cook for about 2-3 minutes (this helps to soften the cauliflower).
  • Remove the cauliflower steaks from the skillet and place them onto a baking sheet. Spread a generous amount of the spicy mayo on top. Bake at 400F for about 20-25 minutes, until the cauliflower steaks start getting brown spots.
  • Garnish with parsley and serve immediately.

Helpful Tips and Tricks

  • Keep an eye on the "steaks" as they're baking. They're going to start browning up pretty quickly and that is your clue that they're done.
  • You can cook this recipe to your likeness. Even though I'm a big fan of browing the top, some people actually prefer more of a crunch. Since you can eat cauliflower raw, you really don't have to worry about undercooking as long as you know that it might have a bit more crunch the less time that you cook it.
  • Be certain to cut the slices thick. If you cut them too thin, they're going to fall apart. And while that is still edible, you will lose that "steak" vibe that you're going for.

Recipe Variations

The easiest way to change up this recipe is to vary up the seasonings that you use. If you want to make them spicy, add some more sriracha or even some chili flakes to the tops.
Another great option is to sprinkle on some salt and top with fresh cilantro or other fresh herbs as well. You can easily make each steak taste totally different depending on what type of herb that you want to add.
