Ingredients

  • 1 lb tomatoes sliced into rounds
  • 1 medium red onion thinly sliced into rings
  • 2 tbsp fresh parsley finely chopped
  • 2 medium garlic cloves minced
  • 3 tbsp olive oil
  • 1 tbsp soy sauce
  • 1 tsp maple syrup
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tbsp apple cider vinegar
  • 1⁄8 tsp black pepper

Instructions

  • Cut the tomatoes into medium-thick rounds.

  • In a container with a lid, add a layer of sliced tomatoes. Top with some red onion and a sprinkle of chopped parsley. Repeat the layers until everything is used.

  • In a small bowl, whisk together the olive oil, soy sauce, maple syrup, salt, paprika, vinegar, minced garlic, and black pepper.

  • Pour the dressing over the tomatoes. Cover the container with a lid, shake gently to coat, and refrigerate for at least 30 minutes before serving.
