Crispy Air Fryer Avocado is a fun little twist on the avocado we all love. Creamy inside, crispy on top, and finished with a fresh cucumber tomato salad — simple, beautiful, and really good.

Ingredients

  • 2 avocados, halved and pitted
  • ½ cup panko breadcrumbs
  • tsp everything bagel seasoning
  • 2 tbsp olive oil
  • ¼ tsp salt, or to taste
  • ½ cucumber, diced
  • 1 tomato, diced
  • 3 tbsp red onion, finely chopped
  • 1 tbsp olive oil
  • ¼ tsp salt, or to taste
  • tsp black pepper, or to taste
  • 2 tbsp parsley, chopped

Instructions

  • Cut the avocados in half and remove the pits. Brush the cut sides with olive oil and sprinkle lightly with salt.

  • In a small bowl, mix the panko breadcrumbs and everything bagel seasoning. Press the cut sides of the avocados into the mixture, coating them well.

  • Place the avocados in the air fryer basket and cook at 400°F (200°C) for about 6–8 minutes, until the topping is golden and crispy.
  • In a bowl, combine the diced cucumber, tomato, red onion, olive oil, salt, black pepper, and parsley. Mix well.

  • Spoon the cucumber tomato salad over the warm crispy avocados and serve right away.

🔀 Recipe Variations

🌶 Add a little heat
Sprinkle a pinch of red pepper flakes or a little chili powder over the avocado before air frying for a gentle kick.
🧄 Try a garlic twist
Add a little garlic powder to the panko mixture for an extra savory flavor.
🧀 Add a cheesy touch
Mix a tablespoon of nutritional yeast into the breadcrumbs for a light cheesy flavor.
🥗 Change the topping
Instead of the cucumber tomato salad, try topping the avocado with a simple corn salsa, chopped herbs, or even a quick cabbage slaw.

These avocados are best enjoyed right after cooking while the topping is crispy and the avocado is warm and creamy. If you have leftovers, store them in an airtight container in the refrigerator for up to 1 day. The topping may soften, but they’ll still taste good.

⏳ Make-ahead tip

You can prepare the cucumber tomato salad a few hours in advance and keep it in the refrigerator. When ready to serve, air fry the avocados and spoon the fresh salad on top.
