Ingredients

  • 1 lb frozen green beans, cut style 450 g
  • 1 medium onion, diced 150 g
  • 1 medium carrot, grated 100 g
  • ½ cup vegan sour cream 120 g
  • 2 tbsp breadcrumbs 15 g
  • 2 tbsp olive oil 30 ml
  • ½ tsp salt, or to taste 3 g
  • ¼ tsp black pepper, or to taste 1 g

Instructions

  • Heat olive oil in a large skillet over medium heat. Add the onion and carrot, and cook for 5–6 minutes until soft and lightly golden.

  • Place the frozen green beans directly into the skillet. Cover with a lid and cook for about 5 minutes, stirring once, until just tender.

  • Stir in vegan sour cream, salt, and black pepper. Mix well, cover with a lid, and let simmer on low heat for 10 minutes.

  • Remove the lid, sprinkle breadcrumbs over the beans, and stir gently. Cook for another 2 minutes. Transfer to a plate and enjoy warm.
