1lbfrozen green beans, cut style450 g
1mediumonion, diced150 g
1mediumcarrot, grated100 g
½cupvegan sour cream120 g
2tbspbreadcrumbs15 g
2tbspolive oil30 ml
½tspsalt, or to taste3 g
¼tspblack pepper, or to taste1 g
Instructions
Heat olive oil in a large skillet over medium heat. Add the onion and carrot, and cook for 5–6 minutes until soft and lightly golden.

Place the frozen green beans directly into the skillet. Cover with a lid and cook for about 5 minutes, stirring once, until just tender.

Stir in vegan sour cream, salt, and black pepper. Mix well, cover with a lid, and let simmer on low heat for 10 minutes.

Remove the lid, sprinkle breadcrumbs over the beans, and stir gently. Cook for another 2 minutes. Transfer to a plate and enjoy warm.
