Ingredients

  • 1 can chickpeas, rinsed and drained
  • 2 medium avocados, diced
  • 2 medium cucumbers, sliced
  • 1 ½ cups cherry tomatoes, halved
  • ¼ medium onion, thinly sliced
  • cup chopped parsley
  • 2 tbsp lime juice
  • 2 tbsp olive oil
  • ¾ tsp sea salt, or to taste
  • ¼ tsp black pepper, or to taste

Instructions

  • Place the sliced cucumbers, cherry tomatoes, onion, diced avocados, and chickpeas into a large bowl.
