Add the sliced onions, oil from the sun-dried tomato jar (or olive oil), chopped sun-dried tomatoes, paprika, Italian seasoning, salt, and black pepper directly into a baking dish and mix well to combine.

Place the whole head of garlic in the center, cover the dish with aluminum foil, and bake at 400°F (200°C) for about 40–45 minutes, until the onions are soft and caramelized.

Squeeze the roasted garlic cloves out of their skins into the baking dish, then add the coconut milk, reserved potato cooking water, fresh parsley, and fresh lemon juice.

Mix everything together until a rich, creamy sauce forms, then add the boiled potatoes.
