Ingredients

For the salad

  • 4 cups green cabbage, thinly shredded
  • 1 large cucumber, diced
  • ½ cup green onion, sliced
  • 1–1½ cups cherry tomatoes, halved

For the avocado dressing

  • cups fresh spinach
  • ½ ripe avocado
  • cup cashews
  • 3 tbsp lemon juice
  • 2 tbsp olive oil
  • 2 tbsp nutritional yeast
  • 1 clove garlic
  • ¾ tsp salt
  • ¼ tsp black pepper

Instructions

  • Add the shredded cabbage, diced cucumber, sliced green onion, and halved cherry tomatoes to a large bowl.

  • Blend the spinach, avocado, cashews, lemon juice, olive oil, nutritional yeast, garlic, salt, and black pepper until completely smooth and creamy.

  • Pour the dressing over the vegetables and toss well. Let the salad sit for 5–10 minutes to soften the cabbage, then serve right away or slightly chilled.

Toss in grated carrots, thinly sliced radishes, or even a handful of shredded red cabbage.

No cashews? Try pecans, walnuts, or pine nuts for a different texture.
