– 2 medium avocados– 2 medium cucumbers– 1 ½ cups cherry tomatoes– ¼ medium onion– ⅓ cup chopped cilantro– 2 tbsp. lime juice– 2 tbsp. olive oil– ¾ tsp. sea salt or to taste– ¼ tsp. pepper or to taste
Dice the avocado and slice the cucumber, tomato, and onion. Chop the cilantro and then place everything in a large bowl. Add the lime juice, olive oil, salt, and pepper and toss until everything is mixed together well. Serve.
