Tomato and Onion  Salad

Ingredients

– 2 lbs. Roma tomatoes – ½ medium red onion – 1 small Serrano pepper (see notes) – ⅓ cup parsley – 1 tbsp. apple cider vinegar – 1 tbsp. olive oil – ½ tsp. salt or to taste – ⅓ tsp. pepper or to taste

1. Cut the tomatoes in half, and slice them into very thin half circles (as thin as you can). Slice the onion into very thin quarter circles.

2. Thinly slice the serrano pepper and chop the parsley.

3. Place all of the veggies into a large mixing bowl and add the apple cider vinegar, olive oil, salt, and pepper. Gently toss the ingredients together. Serve.

You can store Tomato and Onion Salad in the refrigerator in an airtight container. It will last for 2-3 days, but because the tomatoes can get mushy fast, try to eat it as soon as possible, or only make as much as you can eat in a day.
