– 2 lbs. Roma tomatoes– ½ medium red onion– 1 small Serrano pepper (see notes)– ⅓ cup parsley– 1 tbsp. apple cider vinegar– 1 tbsp. olive oil– ½ tsp. salt or to taste– ⅓ tsp. pepper or to taste
Place all of the veggies into a large mixing bowl and add the apple cider vinegar, olive oil, salt, and pepper. Gently toss the ingredients together. Serve.
