– 2 medium avocados
– 2 medium cucumbers
– 1 ½ cups cherry tomatoes
– ¼ medium onion
– ⅓ cup chopped cilantro
– 2 tbsp. lime juice
– 2 tbsp. olive oil
– ¾ tsp. sea salt or to taste
– ¼ tsp. pepper or to taste
1. Dice the avocado and slice the cucumber, tomato, and onion. Chop the cilantro and then place everything in a large bowl. Add the lime juice, olive oil, salt, and pepper and toss.
– Use firm, ripe avocados. Because the diced avocado will be tossed with other vegetables, you want it to be ripe, but not too soft. Otherwise it will get mushy in the salad.
– Try to cut everything to the same size. Keeping the ingredients to similar sizes as you dice and slice will make the salad look better, but also ensure that all the flavors make it on to each forkful.
