Ingredients

– 4 small cucumbers (about 14 oz.) – 8 radishes – 1 small bunch scallions – ¼ cup vegan mayo – ¼ tsp. salt – ¼ tsp. pepper

Step 1

Cut the cucumbers into thin circles, and the radishes into thin half-circles. Chop the scallions and place all of the veggies into a large mixing bowl.

Step 2

Pour the mayo on top and season with salt and pepper. Mix everything well and serve right away.
