Air Fryer  Spaghetti Squash

This Air Fryer Spaghetti Squash is full of tender squash that's been caramelized and charred. Cooked in the air fryer, it's a super healthy veggie that's flavorful and filling.

Ingredients

– 2 medium spaghetti squashes – 2 tbsp. olive oil or other kind – 1 tsp. paprika or to taste – 2 tsp. garlic powder or to taste – 1 tsp. salt or to taste – ¼ cup roasted pepitas or sunflower seeds, to serve optional

Step 1

Cut the spaghetti squash in half and scoop out the seeds.

Step 2

Generously season the spaghetti squash halves with paprika, garlic powder, and salt.

Step 3

Drizzle them with olive oil (about ½ tbsp. for each half) and spread the oil with your hands evenly.

Step 4

Place the spaghetti squash halves onto the air fryer basket, cut side up. Air fry for about 35 minutes, until nice char marks appear.

Step 5

Once it’s cool enough to touch, use a fork to scrape the strands. I like to start from the outside and work my way in, fluffing them up as I go.

Store any leftovers of this Air Fryer Spaghetti Squash in an airtight container in the fridge for up to 4 days.
