    • Coconut Cream. Optional. Adds creaminess. You can also just scoop the solidified part from a can of full-fat coconut milk.
    • Dates. These add sweetness. You can use other sweeteners of your choice, or skip the extra sweetness altogether.
    • Vegan Ice Cream Cups. You can use regular or waffle cups. You can also serve this Ice Cream in a bowl, topped with fruits.

    How to make this Banana Ice Cream

    1. Place the frozen bananas, tropical fruit mix, and dates into a food processor. Pulse on low, scraping down the sides as needed, until they break down to a coarse consistency.

    3. Scoop the ice cream into a waffle cup or a bowl. Serve immediately.

    Tips for the best Vegan Banana Ice Cream

    • Don't skip the coconut cream. Although the ice cream would still taste great without it, the fat in the coconut cream will add a rich, smooth consistency that can't be beat.
    • Add dates. The frozen fruits make the ice cream sweet enough, but I think that extra sweetness makes the ice cream a little bit better. Add a few for the best flavor.
    • Scrape the sides while processing. The mixture will creep up the sides as you blend everything, so keep scraping it down to be processed. Otherwise, you'll end up with chunks instead of smooth ice cream.
    • Serve immediately. This Vegan Banana Ice Cream will get icy and hard in the freezer, so serve it immediately after making it so the texture is still nice and creamy.
