Ingredients

  • 1 large tortilla wrap
  • 3 tbsp. hummus
  • 1 small cucumber, sliced
  • 8 cherry tomatoes, cut in half
  • ½ medium avocado, cut into slices
  • ½ small carrot, cut into thin sticks
  • 1 tsp. your favorite hot sauce or other sauce
  • 1 handful mixed greens

Instructions

  • Place the tortilla on to a clean work surface. Spread about ¼ cup of hummus down the middle of the tortilla, leaving some room around the edges for when it is rolled.
  • Arrange the veggies on top, going in one direction, so you can roll the tortilla up when you’re finished.
  • Drizzle the veggies with your favorite sauce (I used Sriracha).
  • Add a handful of greens on top. Then fold in the two sides and roll up tightly.

Tips for making the best Hummus Wrap

  • Use a warm tortilla. Cold tortillas are hard to fold and will most likely break when you try. So use room temperature tortillas or warm them briefly in the microwave to make them more pliable.
  • Avoid too many wet ingredients. If you use a lot of moist fillings, such as dressings and juicy tomatoes, you run the risk of getting the tortilla wet, too. Soggy wraps become gummy and tear.
  • Cut and assemble the fillings evenly. Slice and chop everything about the same size to avoid mouthfuls of some ingredients and not others. This tastes better and also makes folding easier.
  • Don't wait to serve this hummus wrap. This wrap is best when eaten soon after assembly. The veggies are crisp and the wrap holds together well, so enjoy right away!

  • Flavored hummus. Try this wrap with homemade or store-bought hummus, plain or flavored.
  • Vegetables- Besides cucumbers, carrots, greens, tomatoes, and avocados, you can add peppers, broccoli, jalapenos, sprouts, etc.
  • Dressing. Sriracha, barbecue sauce, vegan Buffalo sauce, or vegan Ranch sauce would all be delicious.
  • Tortillas- You can use flour tortillas, as well as spinach wraps or gluten-free tortillas. Just make sure they are large and pliable like flour tortillas (corn doesn't work well here).
  • Protein. Add some black beans, tofu, lentils, pine nuts, or garbanzo beans to make this an even more protein-packed meal.

If you want to eat them the next day or later in the week, then prep the ingredients ahead of time. You can store the cut vegetables and then assemble the wraps each day.
