Ingredients

  • 1 large red onion about 8 oz.
  • 2 medium bell peppers about 8 oz.
  • 8 oz. mushrooms
  • 1 large zucchini about 8 oz.
  • 5 garlic cloves, minced
  • 1 tbsp. fresh rosemary, finely chopped
  • 2 tbsp. olive oil
  • ½ tsp. sea salt
  • ½ tsp. pepper
  • tsp. red pepper flakes

Instructions

  • If you are using wooden skewers, soak them in water for at least 20 minutes.
  • Cut your vegetables into similar, bite-sized pieces and place them into a large mixing bowl.
  • Add the rest of the ingredients and mix everything well.
  • Thread the vegetables onto the skewers, alternating the veggies, until you've reached the end of the skewer. Repeat until there are no vegetables remaining.
  • Grill the vegetables with the lid closed until tender and lightly charred, turning every 3-5 minutes. Serve warm or at room temperature. Alternatively, you can grill them on a cast iron skillet, pressing with a heavy lid to help speed up the cooking process.

Pro Tips

  • Soak wooden skewers. If you're using wooden skewers, you'll want to soak them for at least 20 minutes in water so they are saturated and won't burn during the cooking process.
  • Cut the veggies to similar sizes. To avoid uneven cooking, cut the vegetables to about the same size. This will help everything cook at the same speed and also make your Vegetables Skewers easier to eat.
  • Make sure the veggies all touch the skillet. If you decide to grill your skewers on a cast iron skillet, a heavy lid can help them cook faster and press them to the skillet. Otherwise, some vegetables may not make contact with it and they won't cook through.

How to Store and Reheat

Place these Simple Vegetable Skewers in an airtight container to store. Because of the size of the skewers, you may need to use a ziplock gallon-sized bag. They can stay in the refrigerator for up to 4 days. You can also freeze them for up to 3 months. When you are ready to reheat them, just place the thawed skewers back on the grill until warmed through.
