Tomato and Onion Salad

This Tomato and Onion Salad is a refreshing dish that has lots of flavor. Both juicy and crunchy, the simple ingredients in this summer salad make it fresh and delightful, perfect for the season.

Ingredients

  • 2 lbs. Roma tomatoes
  • ½ medium red onion
  • 1 small Serrano pepper (see notes)
  • cup parsley
  • 1 tbsp. apple cider vinegar
  • 1 tbsp. olive oil
  • ½ tsp. salt or to taste
  • tsp. pepper or to taste

Instructions

  • Cut the tomatoes in half, and slice them into very thin half circles (as thin as you can). Slice the onion into very thin quarter circles.
  • Thinly slice the Serrano pepper and chop the parsley.
  • Place all of the veggies into a large mixing bowl and add the apple cider vinegar, olive oil, salt, and pepper. Gently toss the ingredients together. Serve.

Notes

NOTE: You can use Serrano or another kind of spicy pepper. You can also use red pepper flakes instead, or even a pinch of cayenne.

You can store Tomato and Onion Salad in the refrigerator in an airtight container. It will last for 2-3 days, but because the tomatoes can get mushy fast, try to eat it as soon as possible, or only make as much as you can eat in a day.
