Ingredients

  • 1 medium zucchini
  • 2 large tortillas
  • 4 tbsp. hummus
  • 2 handfuls mixed salad greens
  • 6 cherry tomatoes
  • ¼ tsp. salt or to taste

Instructions

  • Grill the zucchini for a few minutes on each side, until nice brown char marks appear. Set aside.
  • Place the tortilla on a working surface and spread a generous amount (about 3-4 tablespoons) of hummus in the center.
  • Place a layer of grilled zucchini right over the hummus. Top it with some greens, tomatoes, and season with salt. (You can add additional veggies or seasonings of choice).
  • Wrap the tortilla like a burrito and toast it on both sides in a pan or on the grill. Slice in in half and enjoy.

Tips for the best Grilled Zucchini Wrap

  • Don't cut the zucchini too thick. Because these are going to be added to a wrap, only cut the zucchini to about ¼ inch thick. This will make them easier to fold in, and also quicker to cook.
  • Use a warm, pliable tortilla. If you are worried your tortilla will tear as you assemble your wrap, then warm it in the microwave for a few seconds before adding the fillings. This will help it roll and fold without ripping.
  • Don't overload the Grilled Zucchini Wrap with filling. Another way to tear your wrap is by adding too much filling. Keep the hummus to about 3-4 tablespoons and don't add too many veggies. This will make it easier to close, with less pulling that could rip it.
  • Grill the tortilla. Once you've assembled your wrap, grill it on both sides. This will add flavor and texture, make it softer so it doesn't rip as you eat, and also warm the interior ingredients for a delicious meal.

How to Store

Store this Grilled Zucchini Wrap in plastic wrap in the fridge for up to 1 day. Over time, these can get soggy, so you would be better off preparing the grilled zucchini and other vegetables, then assembling the wrap when you're ready to eat it.
