Ingredients

– 2 ½ lbs. baby potatoes, or Yukon Golds – 2 ½ tbsp. olive oil – ½ cup chopped scallions – ½ cup chopped dill – ½ tsp. sea salt or to taste – ¼ tsp. pepper or to taste

cook potatoes

peel the skins off the potatoes and cut them into halves

add the olive oil, scallions, dill, salt, and pepper

stir gently to combine
