Simple       Vegetable Skewers

Ingredients

– 1 large red onion about 8 oz. – 2 medium bell peppers about 8 oz. – 8 oz. mushrooms – 1 large zucchini about 8 oz. – 5 garlic cloves, minced – 1 tbsp. fresh rosemary, finely chopped – 2 tbsp. olive oil – ½ tsp. sea salt – ½ tsp. pepper – ⅛ tsp. red pepper flakes

1. If you are using wooden skewers, soak them in water for at least 20 minutes.

2. Cut your vegetables into similar, bite-sized pieces and place them into a large mixing bowl.

3. Add the rest of the ingredients and mix everything well.

4. Thread the vegetables onto the skewers, alternating the veggies, until you've reached the end of the skewer. Repeat until there are no vegetables remaining.

5. Grill the vegetables with the lid closed until tender and lightly charred, turning every 3-5 minutes.
