GARLIC SMASHED POTATOES

Ingredients

– 6 medium Yukon gold potatoes or other kind – 2 tbsp. plant butter – 2 tbsp. olive oil – ⅓ tsp. salt or to taste – ¼ tsp. pepper or to taste – 1 tsp. garlic powder or to taste – ⅛ tsp. red pepper flakes or to taste

Bring a pot of water to a boil and add a generous amount of salt. Cook the potatoes until they are soft. Drain the water and place the potatoes on a large baking sheet.

Using a potato masher, smash the potatoes, but keep them in one piece. Season the potatoes with salt, pepper, and garlic powder to taste.

Dip a pastry brush into the oil and brush the oil onto the potatoes.

Place a thick slice of plant butter on top and sprinkle on a few red pepper flakes. Bake.
