Ingredients

– 1 small English cucumber, cut into half circles (about 7-8 oz.) – 6 small tomatoes, sliced (about 7-8 oz.) – 1 medium green pepper, sliced – ¼ medium red onion, thinly sliced – ½ cup kalamata olives, pitted, cut in half – ½ cup vegan feta cheese see notes

Step 1

Just place all of the ingredients into a mason jar and shake for a good 30-60 seconds, until combined (or whisk all the ingredients in a bowl).

Step 2

Place the cucumbers, tomatoes, peppers, onions, and olives into a large mixing bowl, pour the dressing on top, and mix well.

Step 3

Transfer the salad to a serving bowl and top it with vegan feta. You can use feta cubes, or break them into smaller pieces with your hands. Use store-bought or homemade vegan feta cheese. Enjoy!
