– 1 medium cauliflower heads – 3 tbsp. vegan mayo – ½ tbsp. sriracha – 2 garlic cloves, minced

Step 1

Cut off the bottom stem end from the cauliflower so that you create a flat base and can stand the cauliflower up on a cutting board. Resting the cauliflower on the stem, use a large, sharp knife to trim away the sides, then cut the remaining head into 2 or 3 1-inch “steaks,” depending on the size of your cauliflower. Reserve the sides for another use.

Step 2

In a small bowl mix together the mayo, sriracha, and garlic.

Step 3

Add about ¼ cup of water and salt into a large skillet. Bring to a gentle simmer, and add the cauliflower steaks. Cover with lid and let it cook for about 2-3 minutes (this helps to soften the cauliflower).

Step 4

Remove the cauliflower steaks from the skillet and place them onto a baking sheet. Spread a generous amount of the spicy mayo on top. Bake at 400F for about 20-25 minutes, until the cauliflower steaks start getting brown spots.

Step 5

Garnish with parsley and serve immediately.
